As a mom of two very active boys, I’m always looking for recipes that are quick, easy, and kids approved :). This one is perfect for a cold rainy day when you need something warm and filling. During the summertime, we had a lot of tomatoes in our backyard. If we can’t eat all of them fresh then I freeze the rest. First I wash them and then put them in a ziplock bag into the freezer. Its perfect to make when you’re throwing a party ~ goes great with a glass of wine and some crackers!
