Sweet Potato Chickpea Vegan Burger

Lately, I’ve been wanting to create more healthy vegan recipes for my family. This one is a hit. Kids love them and my husband, too. It has a lot of steps to prepare everything, but I usually do this the night before.

 

Yield: 8 small burgers (pictured)


Ingredients:

1 medium sweet potato (baked)

1 cup chickpeas (cooked or canned)

1 Tbsp red onion (minced)

1 tsp fresh ginger (minced)

3 Tbsp rolled oats

1 tsp sea salt

1 tsp olive oil

1 tsp fresh turmeric (minced) ~ optional

Instructions:

  1. I usually prepare chickpeas and sweet potato the night before. Start with cooking your chickpeas the night before and then just put them in the fridge for the next day. You can also freeze chickpeas leftovers in ziplock bags. They are good for a couple of months in the freezer.
  2. Put sweet potatoes on a baking tray and bake them in the oven (400F) for approximately 45-60 minutes. Once the sweet potatoes are cooled, peel them completely.
  3. In a food processor blend rolled oats for 30 seconds
  4. Put all other ingredients in a food processor and blend all together until nice and smooth.
  5. The mixture will be moist and soft so add extra wheat/oat flour as needed
  6. Form patties
  7. Put 1 Tbsp coconut oil or vegetable oil in a pan
  8. Place patties in the hot pan and cook for 2-3 minutes each side or until browned
  9. Serve with arugula and avocado, or any other fresh salad.
