Quick Vegan Stuffed Mushrooms

If you like to eat mushrooms and need quick and easy vegan lunch you have to try this recipe. Its perfect to make when you’re throwing a party ~ goes great with a glass of wine and some crackers!

Ingredients

1 lb white button or cremini mushrooms

2 garlic cloves, minced

1 onion

2 carrots

pinch of Himalayan pink salt

olive oil

arugula – optional

 

Instructions

Remove stems from mushrooms, chop them finely and put them aside.
Chop carrots, onions, and mince garlic.
Heat 1 tbsp olive oil in a frying pan ~ medium heat.
Put chopped carrots, onions and garlic in a frying pan and saute. Cook until onion and carrots are soft. About 3-4 min on medium heat.
Add chopped stems and pinch of salt (about 1/2 tsp) and cook an additional 1 minute.
Heat oven to 350 F.
Melt 1 tbsp olive oil in a pan. Put mushrooms caps in a pan, sprinkle salt on top of them and stuff them with the mixture.
Bake 15 minutes.
Serve with arugula.
