Easy Home-made Fresh Tomato Soup

As a mom of two very active boys, I’m always looking for recipes that are quick, easy, and kids approved :).

This one is perfect for a cold rainy day when you need something warm and filling.

During the summertime, we had a lot of tomatoes in our backyard. If we can’t eat all of them fresh then I freeze the rest. First I wash them and then put them in a ziplock bag into the freezer. For this recipe I used my frozen tomatoes 🙂 You can use fresh! I just wanted to give you guys tip if you have a lot of tomatoes that you can’t eat, just freeze them and enjoy them later.

If you make this soup from fresh tomatoes you can easily freeze well for 3-4 months. Make sure to let the soup completely cool before placing into the freezer.

It’s best if served with a toast and piece of cheese.

Ingredients

2 lbs tomatoes

1 onion (chopped)

2 garlic cloves

1 big carrot (chopped)

1/2 celery stick (chopped)

olive oil

basil

parmesan cheese (optional)

salt

pepper

Instructions

Heat olive oil in a pot over medium heat.

Chop onions, garlic, celery, and carrots and add them to pot. Saute for about 10 minutes.

Add tomatoes that you previously cut in quarters.

Season to taste with salt and pepper.

Bring to a boil, lower the heat and simmer covered for 20-30 minutes.

Add a few leaves of basil.

If you have an immersion blender then blend everything to make a creamy soup. I’ve used my Vitamix blender but first, you have to wait for the soup to cool down a little bit.

Garnish with basil leaves and parmesan cheese.
