    Sweet Potato Chickpea Vegan Burger

    Lately, I’ve been wanting to create more healthy vegan recipes for my family. This one is a hit. Kids love them and my husband, too. It has a lot of steps to prepare everything, but I usually do this the night before.   Yield: 8 small burgers (pictured) Ingredients: 1 medium sweet potato (baked) 1 cup chickpeas (cooked or canned) 1 Tbsp red onion (minced) 1 tsp fresh ginger (minced) 3 Tbsp rolled oats 1 tsp sea salt 1 tsp olive oil 1 tsp fresh turmeric (minced) ~ optional Instructions: I usually prepare chickpeas and sweet potato the night before. Start with cooking your chickpeas the night before and then just put…
